Origin

Sichuan Malatang emerged in Sichuan Province. Known for its unique geographical features and climate, Sichuan is famous for its spicy cuisine. Malatang was created as a convenient and flavorful dish. Initially, it was popular among local people and gradually spread across the country. Various ingredients are cooked in a pot with spicy seasonings, offering a delicious and satisfying meal.

Ingredients

  • Vegetables: A variety of vegetables including spinach, cabbage, bean sprouts, mushrooms, etc.
  • Bean products: Tofu, dried tofu, and other bean products.
  • Meatballs: Different kinds of meatballs like pork balls, chicken balls, and crab roe balls.
  • Seafood and meat: Seafood such as shrimp and squid, and meats like beef and lamb.
  • Spices: Chili peppers, Sichuan peppercorns, ginger, garlic, doubanjiang (spicy broad bean paste), and hot pot base are the essential seasonings for Sichuan Malatang. Additionally, seasonings like salt, sugar, light soy sauce, vinegar, and sesame oil are required.

Preparation

  • prepare ingredients: Prepare the ingredients. Clean various ingredients and cut them into proper sizes, then string them on bamboo sticks.
  • fry base: Heat an appropriate amount of oil in a pot, add ginger, garlic, and doubanjiang and stir-fry until fragrant. Add hot pot base and stir-fry to create a red oil.
  • add water and make soup: Pour in an appropriate amount of clear water. After boiling on high heat, turn to low heat and simmer for a few minutes to fully blend the flavors of the seasonings.
  • cook ingredients: Put the strung ingredients into the pot and cook. Add different ingredients according to their cooking times.
  • season ingredients: After the ingredients are cooked, take them out and place them in a bowl. Add an appropriate amount of salt, sugar, light soy sauce, vinegar, sesame oil and other seasonings, and then pour in the soup used to cook the ingredients.
  • sprinkle garnishes: Sprinkle with chopped green onions, cilantro and other garnishes. A bowl of hot, spicy and fragrant Sichuan Malatang is ready.
